In 1854 was patented
the method of the" hydrostatic Percolation " to increase the water
pressure during the delicate make of percolation. To do this, the water is
placed in a vessel higher than the filter and therein is conveyed through a
thin tube.
The weight of the column of water allow to flow so rapidly and to extract more coffee aromas.
