was decided to apply a more technological process which was almost
"magical": the "Vacuum" method.
In this case is used the power of steam inside a boiler to force water through a filter into an overlying pot containing ground coffee: once removed the source of heat, the steam condenses createing a vacuum which suck immediately the infused downwards.
